Hey Reader, This Friday is Pi Day - which I keep wanting to type as Pie Day, partly because it's both! When you think of pie, you usually think of the sweet dessert, but it's more than that. There are pot pies and other forms of savory pie, and I'm all about celebrating both kinds. These are some of my family's favorite recipes that we make to celebrate every year, and I know you'll love them, too. Sweet or savory, which is your favorite kind of pie?I love fruit pies, and with spring right around the corner - literally - the light and refreshing no bake pie I can whip up quickly is exactly what I crave. My favorite is this No Bake Mango Pie, and it's the perfect way to celebrate, especially since it uses a graham cracker crust, so no need to make or roll out a traditional pie crust. If you want to make Homemade Pie Crust, it's not as hard as people make it out to be. I have a secret ingredient in mine that helps keep it light and flaky, and I make it in my food processor, which is faster and easier than traditional methods. I did promise savory pies, too. I have been making this Southwest Tortilla Pie since my kids were tiny. It's so easy to put together, espeically if I use leftover rotisserie chicken, and it's a fun dinner that everyone always raves about. My kids also love tamales, but they're an all day process, so I came up with this twist on a pot pie that is one of my most asked-for recipes whenever friends try it. Tamale Pot Pies are so much fun and have the traditional flavors we love with almost none of the work! How are you celebrating Pi Day this week?
